In my experience, 5/5 does play significantly bigger than 2/5. One of the main reasons is that you now might have two guys every hand who feel the need to protect their investment against a raiser.
If your game doesn’t have at least a couple players who think that extra blind investment is worth defending a way larger percentage of hands, your game probably isn’t very good anyway.
The reason why rooms don’t spread that game is simply because it plays too big which is not a good thing for a lot of rooms. Same reason why some rooms are reluctant to even offer 2/5 and prefer to keep everything at 1/2 or 1/3.
