You could traverse the seasons of High Stakes Poker which, I think, are still available on the internet. There is certainly no shortage of interesting players, interesting hands, interesting commentary by Gabe and AJ, etc.

There are a couple of threads in the Casino and Cardroom Poker forum that provide a lot of information on these episodes such as hand histories, $ won/lost, VPIP, etc., that could be useful in your podcast.
