I do some minor streaming on twitch/youtube and post videos to youtube. I generally four table ignition and while having all four tables on the screen at once is ok for myself and others who are used to multitabling, some non online players told me it's kind of hard to follow along. Does anyone know how to get OBS to switch between windows at full screen such as how tonkaaa and these guys do?

Create a separate scene for each table. Essentially you just copy your four table scene, and resize and move your monitor capture so that one table is full size on screen, then repeat to make a scene for each table. Lastly, assign hotkeys to each scene to switch between them.
