So there are some arguments for some of the 1 drop choices, and they are valid depending on the win condition of the deck.
I think there are potential downsides to all of them, but after some playtesting, I just feel that zombie chow does exactly what I want it to do, and that's help advance the board state right from the get-go. It trades well with one and two drops, it is an amazing coghammer target, and it is a bit of a mind game play with your opponent (as they often will think you are a standard midrange pally, and play accordingly...with the potential effect of you getting more value in Divine Favor turns). Basically, I want to establish a solid, sticky board by turn 6 and just win. And chow aids in that goal.
Leper Gnome does get that deathrattle damage, but dies easily...it is a better late game top deck than chow. But overall, you can argue that with avenge and noble sacrifice, you can get just as much damage in with your chow as well as protect your early board.
SecretKeeper is ironically less good in this secret deck imo...Like, you want to get the most value out of your Mysterious Challenger, thus, in a perfect hand you don't want to see any secrets early; so it becomes awkward keeping SecretKeeper turn one but mulliganing your secrets with the thought, "well if I draw secrets at least it's not as bad"...Some would then argue, "Well, Kreme, just put more secrets in your deck!" but then I cut cards that help me establish that Sticky-board state. I'd rather just put chow in, mulligan for it, and feel at peace mulliganing all my secrets.
