If you watch alot of the streamers play the OTK version of the deck, you can see how weak they are making the deck by adding so much cycle, just so they can get enough murlocs for that OTK potential.
With Murloc Knight, you are generating value, early, instead of relying on getting to turn 15+ to generate the OTK combo. You run two spells in this deck, so generating murloc knights/blugills/random murlocs for the first spell is often getting value (and sometimes OTK) while the second spell is usually too overwhelming for your opponent to handle.
Bottomline, you create a stronger value deck with some OTK potential, instead of relying on pure OTK.
