There are lots of "one dimensional" characters in GoT but are all very well acted, Joffrey was brought up earlier and is a good example. Most of the actors on the show are excellent, even in the smaller supporting roles, one of things that sets GoT apart from most other TV shows.
Looking over a list of characters, the only bad performances in notable roles are
Dany (which is quite a shame considering she's clearly one of the two main characters in the whole freaking series),
older Brann (I know it's the same kid and it could be the cataonic nature of his character now but he's not working for me),
new Daario (actor completely miscast, likely not his fault)
Shae (LOLOLOLOLOL)
I'm going to guess from Dany's perspective, it doesn't matter what the wagons are carrying. She only knows that the Lannister army is traveling by wagons, so they must be carrying something important enough to warrant the armed escort, and the loss of the contents will likely deal a big blow to the Lannister army. Therefore, it's a good strategic move to destroy them. Defeating the Lannister army while protecting the wagons in an attempt to then appropriate the contents of the wagons for her own forces requires a completely different strategy and much more precision. From a storytelling and visual perspective, it's much cooler to just have the dragon destroying everything in sight rather than only frying humans while trying not to torch the wagons.
Could mean she didn't know if he was alive or dead.
Nope. They made this abundantly clear later in a scene where Jaqen and Arya play the "truth or consequences" game:
Arya: "...a man call the hound - Sandor Clegane. He tried to sell me but was wounded in a fight. He begged me to kill him but I wouldn't. I left him in the mountains to die. I wanted him to suffer - I hated him..."
<gets struck by Jaqen H'gar for lying>
Arya: "I HATED him!"
<gets struck again for lying>
Arya: "THAT'S NOT A LIE!!"
<gets struck a third time>
Jaqen "A girl lies to me, to the many-faced god, to herself..."
I'm gonna go out on a limb here and say she did not leave him to die because she hated him.
Arya is likeable and her character understandable but I wouldn't' say she's one of the better characters on the show.
The best characters off the top of my head (best in terms of backstory, depth, growth, all around being interesting)

Varys and Davos on same tier as Dany is, um, interesting. Dany, however, is mostly not interesting, predominantly because of the lack of suspense with which her character bounces through GoTLand.
I've seen a lot of people say she's the best on the show. That's kinda hard to argue with at this point too, she absolutely killed it in the sand snake dungeon scene.
I've been unimpressed with her in everything that she's done. In this and Dredd she's pretty much just got a sombre attitude that is one dimensional and grows boring for me to watch.
I can see how others enjoy what she does but it just doesn't really do it for me. It's especially bad when she's with someone else who doesn't show much emotion either and it's like watching two robots conversing.
The rare outbursts of emotion from her and always exciting for me, and I think that when she was with Marg and the Queen of Thorns in Kings Landing it was one of the highlights of the show though.
Jack Gleeson was 19 when the show began, 22 in his final season (season 4).
Maisie Williams was 14 when the show started, and hadn't even turned 20 yet when season 7 finished filming. I don't think it's a fair comparison.
If your argument involves conceding Maisie blows at acting while arguing it's because she's young, I'm cool with that. So long as the premise is in tact I'm good.
That said...she's still nowhere near where Joffrey was despite 7 seasons of practice, (I assume) some world class acting coaches during said 7 years & world class writing and accommodations.
If it was youth and inexperience that caused such a notable gap in skill between her and Jack, then why is she still sucking to this day against all odds...?

Agreed. There has never really been a scene where it was painful to watch her, and she has held her own fine is her scenes with the top GOT actors (for instance all the scenes with Tywin, Dance is clearly a better actor, but not so much so that she ruins the scenes).
Maisie's a reasonable actress, dunno why you'd single her out. Sophie Turner isn't any better.
