The problem is...if you have 10 tables and after 20 mins, 8 of them are playing Stud 8, one is playing Triple Draw and the other is playing PLO, what happens when the tournament goes from 55 to 54 players, causing one of the tables break?

Should the PLO table be broken so that the majority of games are Stud 8? Or should the table that just close the table that caused the tournament to go from 55 to 54? Either way, someone is going to have played more/less of a particular game because if you keep the PLO table, you will have an open seat for a Stud 8/Triple Draw player(s). If you break up the PLO table, those players are repeating games that they've played if they move to one of the Stud 8 tables and missing games if they move to the Triple Draw.

If the tournament had more runners, this would be all out of whack. I'd imagine that you'd want to eventually make the games the same so that during the money bubble and final 2-3 tables, players are playing the same game.

I don't know how they get around table breaks in live tournaments, please enlighten me.

They don't 'get around' table breaks. Its random. Sometimes you end up playing a bit more of one game or another.

A table breaks and the players each get moved to open seats on other tables. I guess your concern is that players sometimes end up playing a lot of some games and less of others? Clearly this is hugely preferable to the endless stalling nonsense.
