That's a badly overcooked pork loin, but it's no tenderloin. I cook both regularly. The tenderloin lies alongside the loin you are cooking, but it's much more tender and the meat has a different texture. At it's fattests it's usually about 3 inches across, about half what the loin itself is.

In any case, bbq isn't made from tenderloin or loin, it's made from ribs and other low cost cuts. You cook it for hours at low heat and there's no need for a thermometer.

What I'd like to know is........what has changed in the world that makes people scoff at these people who are going out there and bringing their guns for JUST intimidation purposes in this scenario.
