No, seriously mang. That pig is WAY overcooked. You're 55 degrees over USDA safe temp. You're 35 degrees past well done. You wanna pull a pork loin like that at ~140 and let it rest for 5-10 minutes. Trust me on this.

I don't BBQ (too lazy, don't own a smoker), but I'll snap a pic next time I cook pork loin if I remember.

The problem with pork is everybody has been convinced that it's some super dangerous food that needs to be obliterated. It isn't. Chefs, farmers and butchers were yelling at the USDA for years to update their info, and they finally relented back in (I think) the late 90's.

Pork fear is based on trichinosis. Thing is, trichinosis can only be transmitted by eating meat that is infected with trichinosis. This was an issue when backyard pigs were fed anything and everything from the trash, but it's a total non-issue for farm-raised pigs because they aren't fed meat.

TL;DR cliffs: Medium rare pork is perfectly safe and tastes delicious.

haha, there is actually a reg i play 20/40 with who had a Salt Lick t-shirt on that I saw him wearing 4 days ago.

You are right...you can tell Salt Lick isn't legit. I've known about it for a few years now, and at first I really wanted to go, and now I am aware that there are many more BBQ places in Texas I'd rather go to then there that are the real deal like the butcher in Lockhart who serves it to you rolled up in wax paper..

I didn't know the other place was a chain, but it was still pretty damn good.

I'm a homer but it's hard to beat Memphis BBQ, imo. Skip the Rendevous, though--it's overrated.

Any good BBQ in Atlanta? I'll be there next week.

It is interesting how BBQ used to be food for poor folks, and how they had to use what was available to them locally, apples for vinegar based BBQ in carolina...tomato based in Georgia...and sweet in Memphis from the molasses. And how you now have regional rivalries about what is best.

My apologies for derailing a derail...but if any of you are in Oklahoma ever, you MUST go to El Reno, Oklahoma right outside Oklahoma City. Which is the onion burger capital.

Onions infused into the incredible tasting meat and grilled. And then they top with simple mustard and pickle. INCREDIBLE steak burgers...

The spots in this town are Johnnies Grill and Sid's Diner. If Oklahoma city had legit limit action...I would move there to be closer to these restaurants in a heartbeat.
