Note taking and player profiling in draw games

I've never ever been a great note taker in any poker variant I've played, and as I delve further into draw games (and back into poker in general) it seems more and more important that I tune that aspect up.
What kind of notes do you guys find the most important to take? If one were reviewing each session one hand at a time, what key categories should one most look to fill out in detail?
