It would be nice if 5/10 became a permanent daily game and I think having a cap would help that. I think around $3000 would be good and still allow for deep stack play.
I think they do have a policy for each game and probably the dealer didn't know it. Call and ask to talk to a floor person.
As for taking shots, what does it matter if the bigger stack has twice as much as you or 20 times as much? For all intents and purposes, their stack is exactly equal to yours when you go all-in. If you're playing very shortstacked, it doesn't matter either because you tend to play more premium hands you're willing to go all-in with.
