I liked the way Bay 101 chiprunners used to do it. They wore vests sort of like AK-47 magazine carriers, and carried a number of racks on them. They worked a small area, so they mostly only needed 1 or 2 denominations. There were 4 or 5 chip "kiosks" throughout the room, each with a bunch of locking drawers. When their chip vest got low, they would replenish from their kiosk drawer. You would usually get chips within 30-60 seconds from when you called for them.
Then Bay 101 got rid of all the chiprunners. Maybe they got tired of paying them.
