Why does Windows 10 connect to the internet before it loads the antivirus? Seems like an easy thing to have not happen. At least this is how the icons appear in the tray, not sure if maybe programmatically the antivirus is loaded, but the icon shows later. Anyone know?

It's almost certainly happening the other way around under the hood. The tray is really all about the GUI and not a guide to the boot order of particular services.
I think you might be able to use Process Monitor to log things if you really care.

On a somewhat related point, I'm building a Win 10 rig in the next couple of weeks, there was a post here somewhere (I think it was in one of the stickies but I can't find it) that indicated that the simplest thing you could do for security purposes, at least in a Win 7 context, is to run with two accounts, a standard account for everyday use and then an admin account only used when necessary, and as most malware etc need admin to do anything that cuts out a bunch of potential exploits easily enough. Does Win 10 work in the same way and is this sort of thing still applicable?

Yea, good point, you can do that in Windows 10.

Yes, you should always run with a limited user account and not administrator privileges.
