what would you say to those who say the fall of rome was when justin II died? as he iirc spoke latin and was the only bysantine ruler that was truly as close as we get to a roman emperor with his philosophy, language etc

Definitely 476. It's called the Fall of the Western Empire.
1453 is called the Fall of Constantinople, and you can describe it in an additional section.
The death of Justin II has never been called the fall of anything. However, if you are a scholar, you have your own authority to defend your idea and illustrate a new point of view
