It is important to know the old man's position. The closer to UTG he is the more likely he has a big hand.
Old man's pre-flop raise size tells me he is good. He trusts his post flop skills live. Also assuming he is good, he would never raise more with a big ace. His bet sizing would be the same no matter what he had. But if he does alter his bet sizes then I would be suspicious that he has a monster and is inducing.
Given that you think he is tilting and you call pre-flop, the flop call is standard for me.
On the turn he is betting roughly 40% of your stack. Small pairs should give up. If he has K

so be it. Unlikely he has an A with a kicker you beat. I would fold here. But if you call, you are pot committed. You pretty much have to call the river. Unless a heart comes and you buy that he has a flush.
So this is about reads. If you are right that he is tilting you win. I don't see how you call the turn and fold the river.
