This smoking process dominates oven cooking. I challenge you to find a restaurent that makes nachos this way as I'm pretty sure its innovating.
rofl... are you sure you didnt suffer some sort of head injury when fighting that bull?

I dont understand peoples obsession with being mean on 2p2 in general. I think it must stem from a life of being neglected and pushed around. If you've had success at poker it doesn't give you the right to be rude to other for no good reason. Boom I dont know where you get off judging food that you've never tried. The shrimp in that dish are actually quite juicy and succulant. As for the olive oil comment I hope you realize 90% of dips, salad dressing, and sauces involve oil. The oil in that shrimp dish becomes infused with the flavors of the garlic, shrimp, and habanero. It is actually the best selling appetizer at the last restaurent I worked at and it was my recipe. I am offering a service to players on 2p2 and I really dont see a reason for people like you to try and ruin it with unsubstantiated comments that really make no sense. Find me one restaurant that smokes nachos in a BBQ. Please give me the name and phone # because I have never heard of it ever or seen it done on Food Network.

gakn, while your idea is good, your business plan is not imo.

What you need is a (professional) kitchen of your own, a car, and an order+delivery service. You'll be limiting yourself too much by living with some early twenties 2+2 dudes who are likely to call you out of bed to make turkey sandwiches or burgers at all hours of the night. Not enough EV there, methinks.

If I'd be playing the WSOP and I was balla, I'd probably look for someone to bring me decent, healthy, affordable food during breaks. God knows the affordable food at the Rio isn't all that great.

like I said in PM, Ill delete my post if youd like. that being said...

lol to make it clear to everyone else why this is so funny: its like referencing a mike sexton quote when discussing how a hand was played.

lol @ hu-ironchef-4-rollz!

I think booshaka and OP should dual it out and have us 2+2 slugglings judge.

You got a pretty high ego their boomshaka, poker related im guessing.

No you won't, because you can't.

If you're sincere that you would delete your post if he didn't like it, which seems to imply that you care if he's offended, and he's obviously offended, why do you continue? There's nothing wrong with criticism in this forum, but I think we all understand your feelings on this thread now, enough is enough.

Awesome idea OP. Your food looks great too! Everyone has different likes and dislikes when it come to food obviously but I am certain that you will be able to satisfy most requests and add a great positive feeling to a "WSOP" house. Who knows, you may be the talk of the town. Good luck with it and don't forget to post a trip report after the series is over.
Also don't let people like boomwhatever get you down. When you post on a forum like this you will always get the jerks. Ignore the jerks! Most people seem really positive about your entrepreneurial spirit. Cudos.

anyone sitting here dissing pictures of food this guy made needs to get a life. this guys trying to use his skills to make some side cash, if you dont like it you dont have to hire him. people on the internet are so ridiculous sometimes..
05-17-2008 , 01:42 AM
People are generally supportive in cooking threads in OOT/EDF, however since you are asking for a job and you have no references people are going to hold you to a much higher standard.

You chose pretty bad dishes to take pictures of. I wouldn't hire a personal chef because of his ability to make Nachos/burgers. What you really should have done is provided a sample days worth of food. Another problem is all of the food in the thread, while tasty looks incredibly unhealthy.

oh sorry, on a lot of other forums you are able to edit as much as you want. I thought with the new 2+2 you could do that as well. Can you, as a mod delete them then?

nah I suck at poker, and I dont have a big ego but knowing what I know from my short time in school and in this industry ...

As for the ironchef, I would seriously do it for a couple hundred, but theres no real way to judge it. No ones going to taste the food, and who will judge? An open pole would be ******ed. And how are any rules enforced?
05-17-2008 , 02:48 PM
I sent boom the recipe for the spicy shrimp so he can try it out himself and see what Im talking about.

As for engaging people on the forum I am a little disapointed with myself. I shouldnt let people bother me so I wont be chirping back anymore. Take any shot you want at me I wont respond. I will be making and posting some good stuff in the next few days. I'll make some healthy dishes and salads so you health people wont feel left out. I'm starting to get some PMs so I feel Im on the right track. Time to double my efforts.

ironchef would be pretty +EV to the winners ego and fun in general.......Wed have to be in the same place same time obv.......never know what the future holds maybe itll come together somehow.

In response to the health guys......

Garden Spaghetti :

What we have here is spaghetti noodles cooked al dente then coated with a teaspoon of olive oil. I chopped up tomatoes, red peppers, cubanelle peppers, and red onions and kept them raw so it doesnt lose any of the nutrients. I mixed them in with the noodles and added dried chili flakes and ground black pepper. It is served with a piece of fresh mozza and tomato slices with a little balsamic vinegar and pepper. Lots of flavors going on here and best of all its really good for you.

05-17-2008 , 04:35 PM
That's a lot more like what I'm talking about. That's easy to make, but I'm way too lazy and uncreative and it looks really nice and tasty. If I were going to WSOP, that would be right up my alley.
05-18-2008 , 12:07 AM
These dishes seem pretty weak. Maybe it's only me but I think that they simply lack imagination and effort. I mean, as a healthy dish, you could do something like a pesto sauce with a tomato salad. I'm really not impressed with the last dish, especially the presentation of it. Seems bland to me...

As an aside, put the mozzarella on the sliced tomatoes and drizzle some olive oil and chopped onions on them, then salt and pepper to taste. Would be a much better side dish.
05-18-2008 , 11:47 AM
this sounds like it would taste really good, but there are a few things you could do to make it better for you. instead of using straight up semolina spaghetti (semolina is basically nutritionally useless) us could use a short grain brown rice or noodles made with quinoa flour (very rich in protein).

it might also be nice to work in some mushrooms with this dish. they have wonderful probiotic qualities in addition to being rich in proteins, antioxidants, and many other great nutrients. this dish could go well with some maitake, porto, or white button, crimini or a mixture of them.

it seems like this dish could also benefit from a leafy green, maybe some steamed suisse chard or kale? even some broccoli?

to pack in even more nutrients this dish could maybe see a few nuts tossed in? i love pine nuts in my pasta-esque dishes.

keep it up galen, i think you're on the right track!
best of luck!

I would be interested in something like this during the series, if you (or someone) decides to do delivery. I am open to anything from a short list of ingredients. Pretty much chicken, steak, and fish kinda thing. 3-5 meals a day would need to be prepared fresh. Hit me up via pm if this is doable.
05-19-2008 , 11:49 AM
5 meals a day!?!
05-19-2008 , 09:33 PM
Boom plz cook the shrimp and get back to us asap.
05-19-2008 , 10:11 PM
thats not going to go well.........if you havent noticed the guy has it out for me. i will gladly instruct anyone whos interested how to make it.
05-20-2008 , 05:41 AM
it's pretty classless to diss a dude in his thread and then advertise your own services.

furthermore, most people like nachos and burgers. if you don't, ask for something else or don't hire the guy. really lame to **** on him like this.

Edit BF: This refers to the previous post, which I have since deleted.

Rice Wraps :

This is less of a meal and more of a snack/appetizer. You can roll these with anything you want but I like to keep mine light and simple. I cooked some vermicelli noodles and grilled some garlic chicken. I cooked then patted dry some rice noodle circles. I layered baby spinach then the noodles and chicken. Roll them up and your ready go. Side note, if youve never had the experience of rolling rice noodles......it takes practice as I ripped my fair share of those things before I got my cook/dry/roll technique down. I served the wraps with a hoisin sauce with some chopped peanuts. I can make anywhere from 15-40 of these per hour depending on toppings and noodle size. Variations would include shrimp, pork, beef, veggies or a combo.

Ok I've lurked in this thread for awhile and can no longer stand by idle. Boomshaka was really forward with his point, but none the less on the money. I do this for a living and would lose the majority of my clients if I prepared meals like this.

Gakn I think you intentions are good, but it truly is a lot of work to consistently produce top quality meals for a variety of tastes 2-3 times a day. It seems right now like your focusing on making 1 or 2 things and the results thus far are mediocre. The workload added by trying to cook different meals for multiple parties is a lot. If you do go forward with this I recommend keeping it down to a select few, so it's easier to manage. I wish you the best of luck, I really do. Just make sure you understand what your getting in to. If this is disasterous your reputation is shot amongst a large number of people, tread lightly.

Le Cordon Bleu is a joke and really will not prepare you for whatever it is you desire to do in this industry. Best of luck.
