My name is Galen and I live in Ottawa, Canada. I run a catering business that has me cooking at houses all across the city. I would like to offer my services to anyone that has rented a house for WSOP and is interested in a months worth of delicious meals. I have many specialties that include many varieties of steaks, chicken, shrimp, home made stuffed burgers, and home made nachos. Besides my favorites I can pretty much whip anything up that is asked of me. I am 23 years old and an online poker player but not on the high stakes level anymore (had a good year at 10/20 then kinda faded off). PM me if your interested.......Rates will be based on house size and scheduled work hours.

This is a very cool idea.

How long will you be in Vegas for? Are you in need of a place to stay? Would you be willing to consider an arrangement where you lived in the same house as your clients and was on call whenever they were hungry? Would you be willing to cook for guests? What type of kitchen set up do you require? Would you be willing to deliver food to the poker room while tournaments are on break?

Agreed. Very cool idea.

Also, what type of experience or schooling do you have (i.e. graduate from the CIA, etc.)? Ever been a regular or private chef before?

I have done private chef services for clients before but never for a month but I dont see that being a problem as I am very creative and if something is requested of me that I am not used to making its a simple matter of hoping online reading up on it and going from there. As for my credentials I have worked in restaurents in Ottawa and my father is a chef. I started my catering business because I wanted something to do besides poker and it was an obvious choice to do something I love. I plan on going to Cordon Bleu next year. Cooking is really my passion. If hired I would need somewhere to stay. Kitchen set up requires a BBQ as I am ballin out of control on the grill. This is for everyones best interest. Standard kitchen, a few stove top elements, room to prepare meals, pots, pans, strainer, etc.

As for being on call I dont have a problem with that. Obviously I need to sleep and would like to have some down time but if hired I would be catering to my clients so all these factors can be negociated.

we could probably use you. 4-7 (varies depending on week) 2+2ers on a house for june and july. We'd probably want like 4-5 dinners a week cooked and then additional meals/snacks stored.

one option could be to cater to multiple houses (in case you cant find 1 house that is willing to station you for 1 month)

so my digi cam got "accidently" broken the other night after a few drinks......thats the story Ive been told at least. Basically all my pics died with it as the memory card was kinda mashed up. Who knew accidents involved lacrosse sticks like ever?

I had a big BBQ at my friends place and I went all out. I have lots of pics and will be posting them tomorrow with description of whats going on. I have some other pics on my blackberry but for some reason the USB connection wont allow me to upload? If any of you techie guys know why please help me out. I will make as many meals this week as possible and upload pics of everything as I feel bad for not doing it earlier.

We have rented a 3 bedroom time share with a full kitchen and we have five guys going we would be interested in a few nights of home style cooking. We will be there from June 13 - June 20 let me know your rates. It seems if you get enough people it would all most make since to have a delivery service for the dinners with pack lunchs with snacks for the tournys. Just a thouhgt.

This is definitely a good idea. Get a primary job working as a private chef at someones house but also supplement your income by cooking up good meals to be delivered to players during the tourneys.

Most of your afternoons will be free anyway since everyone will be playing so you might as well turn that time into cash and if your food is as good as it says it is then happy customers will tell others of the great gakn and orders should only increase as the month goes on.

there keeps being delays in pics.....as of right now Im waiting on 3 very lazy people to email me pics I took on their cameras.......I should have some flying in tonight and I will start posting as much as i can ASAP.

If there are any specific things you want to see made let me know and Ill make it my way and post.

Ok this is my favorite snack/meal. It will give you an idea of the lengths I go through to ensure the best flavor. What we have here is my BBQ smoked nachos with homemade salsa and old cheddar.

This is my chicken breasts being grilled with a mild chipotle sauce that I make and use frequently. In a pinch I'd suggest using the Bullseye premade sauce but its always better homemade.



This is the end product of my chunky salsa. There are 3 types of peppers, tomatoes, garlic, lime, 2 types of onions, and cilantro that come together in this great mix.



Nachos pre BBQ......enough said.



Nachos being indirectly heated with a special wood chip blend in the aluminum foil. This smoking process dominates oven cooking. I challenge you to find a restaurent that makes nachos this way as I'm pretty sure its innovating.

I will abuse my mod powers and will ban you immediately if you don't give us a full trip report of how you ended up fighting a bull.

I was in Cancun last year, well this year too but last year was the crazier trip, and had never seen a bull fight. I literally have a list of things to do before I die and see at least one of every sporting event is on it. Obviously I wasnt going to miss my chance. My buddy Chris and I went into downtown Cancun which is basically 3rd world and found the place. I was about 10-15 resort beers deep, which is watered down Im positive, and Im Canadian from a long line of good drinkers. Needless to say I was in perfect shape. We get out ticket and get in to have a few real beers. During the show they ask for volunteers 9 guys 6 girls. I get picked first and head down below the stadium to find out 6 girls will be chasing goats around, 6 guys will play 3 on 3 soccer with a baby bull, and 3 guys get to be matadors. I put my arm around the girl and sweet talk her into letting me be a matador. I get my costume and suit up. The guy in the pic with the big mustache gives me instructions. He didnt speak english and all he did was shake the cloth and move it saying OLAY! So obv Im ready to go. We walk out doing some gay one step walk as per the real matadors instruction. At the center of the ring the guy turns to us and says ok whos first. The two other guys werent gonna man up so I go first. I had 5 runs with the bull with me getting the better of him 4 times. Run 5 he passes me like the other 4 but stops turns around and bucks me literally 2 feet off the ground. Matadors distract him so I dont get stomped out and I escape joining the elite group of bull fighters in the world. Funny thing is the soccer players got to wear helmuts but vs a real bull we didnt.

Toasted Melts :

This is my melt. It can be made with anything my imagination comes up with. This particular one should be a hit with all you health freaks. I toasted some wheat bread and spread it with some low fat real mayonaise. Variations I enjoy is making it garlic bread first or crusting it with some hot spices to give it kick. Back to this plate though. I chopped up 1.5 cold cuts of honey maple ham and cooked chicken so it ends up being one and a half slices of meat per piece. The vegetables are a red pepper, cubanelle pepper, red onion, garlic and tomato mix. Again the sky is the limit with what mixtures I can come up with here but this is my tried tested and true. I cut two slices of old cheddar and cubbed them into small pieces. They are layered thoughout the melt to ensure the cheese flavor doesnt get centralized. All in all this is a low fat lunch that is sure to fill you up.
