Got the new jerky today, my thoughts below:

Teriyaki:

Although it was a little dry (you told us this) I will say the flavor was def better than the first teriyaki batch. Less soy based I feel and lighter, yet still a punch of flavor. This batch had more rip to it since it was a little dry, but it also had more of a kick to it, but not overwhelming by any means.

Garlic & Spice:

Simply delicious, I'm a big garlic fan and this def hit the spot. Garlic isn't overpowering but def there. Not sure what other spice(s) were used but whatever they were, it worked well for sure. You can really taste the garlic in the chew I felt and wasn't instant (although the smell is) def a big fan of this batch and would get it again if you make more.

Good stuff JL, probably time for a new "Jerky Man" undertitle IMO.

Trying to offer constructive critique here but I'm just not expert enough on making jerky to really nail it down.

My two pieces of teriyaki: I was fine with the dryness, and thought the flavor was better.

Garlic & spice: It was okay, and it's almost like I still tasted teryiaki or something.

Pepper: Unoffensive, but bland, and again still seemed very similar in flavor to the other two. Not much aftertaste and my first reaction was that there just wasn't enough seasoning going on, pepper included. I suspect your marinades are off and a little too similar wrt each flavor (soy? worcestershire?). Crack some peppercorns on these things.

A doneness between the teriyaki and others would be perfect for me. Wish I could offer something more concrete but to me it's still a bit off and I can't really explain it well.

Teriyaki + Sriacha: I was so bummed that this over dried because I thought the flavor was improved so I remade it Wednesday night with more sriacha and more red pepper flakes. I sent some to Raffdog yesterday so when he gets it next week he can give his opinion. I think this one is probably going to be a winner.

Garlic & Spice: was okay but not phenomenal despite the amount of garlic, pepper, onion powder etc in the marinade. I added quite a bit of garlic to taste and a bit of salt to the dried jerky and it really brought the flavor out imo. This may be a new process to enhance some flavors, get some base salty + w/e in the marinade and follow up with a flavor enhancing sprinkle at the end.

Pepper: I used a very popular jerky recipe for this variety but doubled the pepper. I found that it was a little too tangy for my liking (too much worcester imo) and when dried a lot of the pepper was 'missing'.

I also remade the pepper variety with less worcester and 2x more ground black pepper, in addition to ground white pepper, and it still was a bit tangy and not peppery enough. I think I'm going to have to make this and dust with a pepper blend about halfway through drying to get it to stick.

I know when I ordered the pepper variety from Ed's a year ago, the bottom of the bag had a huge amount of pepper at the bottom. Similar to the salt at the bottom of a bag of pretzels. Maybe that's what it takes to really push the pepper flavor. I can definitely recommend his pepper variety if you're looking for a good one: http://shop.edsroadhousejerky.com/Pl...er-BPJLB02.htm

I am also going to try making a marinade as a partial pan reduction with a onion and a bunch of garlic to see if that releases more of those flavors.

Package arrived a few days ago sorry for delayed reviewed.

Note, I'm by no means a jerky expert as I didn't grow up in America, probably my first experience with home made jerky rather than jack links etc

I got the pepper and the teriyaki, i expected to enjoy the pepper more but the flavour of the teriyaki was delicious. As others have mentioned it was a little dry for my liking but the thicker pieces were delicious. As for the pepper it was definitely bland and missing something.

Overall they were both very tasty and I would definitely order again, good job!

Teriyaki was awesome! Ate the whole pack yesterday lol. I don't really have any suggestion except maybe just a tad less soy but overall I was very pleased with it. I would like to order maybe 2 packs next time of any flavors you might make. Keep me on the list! Thank you

I got the new batch with sriacha and pepper flakes. I liked it a lot. The meat tasted really fresh and juicy. Was not dry at all, and actually left my mouth watery. Only thing I would've liked is more spice. If you're going to sell this one as your spicy recipe, it needs more spice. The sriacha didn't come through as much as I'd like. Overall a good jerky that I'd prefer over other store bought jerkys I've bought, but again not a connoisseur by any means. Oh, and my gf opened the package not realizing it was addressed to me and thought I was nuts for ordering jerky from random on intent lol

Hey man, I would try to get a few flavors off http://www.americangourmetjerky.com/ and see if you can match what they are doing. Currently the best Ive ever had. The Hot n Sweet is what you should be shooting for if you want to develop a crack-like addictive jerky. And dont be afraid to do some crazy flavors to set yourself apart, like ginger-wasabi-mustard jerky. I would buy that in a HEARTBEAT.
