I assume it's because it's so juicy and fresh, store bought jerky can be fine for many months.

p.s. don't think for a second that in my 4am delirium that I didn't consider opening the bag and trying to eat an end or two that wasn't moldy. alas, my 8th grade science teacher in the back of my head won out.

Ah crap I replied to this thread the other du but I guess it didn't go through. I'm on a train across the country at the moment and I haven't shipped my dehydrator yet so it will be a little while until there is more jerky!

Interestingly enough, this apt has a dehydrator in it, and it's a better one than I have at home!

Also, i made fresh cut curly fries the other day for the first time and posted a pic on facebook. My dad commented "DO NOT TAKE MAIL ORDERS FOR THESE" lol

never saw this thread...

not sure I'd buy jerky from random person........... how was OP preserving it in shipping?

I love beef jerky but it just seems so expensive.... I understand that a "light bag" of beef jerky is a fairly big piece of meat with alot of water removed. and that original piece of meat is likewise expensive.
