I like to start adding tables 1 or 2 of the new stake at a time. So if you play 8 tables and you're playing NL10 I would start with 4 or 5 NL10 tables and one juicy looking NL25 table. Because you're only looking for one table at the higher stake don't settle for anything less than a really good table, and if table conditions change, leave and find a new one.
Then just start adding NL25 tables as you get more comfortable until you're back up to 8 (or whatever you like to play), then start dropping the lower stake altogether. In this way your winnings from the lower stake can offset your losses at the 1 or 2 tables of the higher stake a bit and you can cross-check to make sure that your bet-sizing and play hasn't changed.
