I mean, pokerstars will take millions, grinders will take a pretty huge amount too, pretty incredible given that even the worst fish aren't that -EV in these games. The mind boggles trying to understand where all the money in the poker economy comes from.

I admit that sometimes I wonder where all the money comes from too, but I think in general we tend deceive ourselves. For example, you will hear people say all the time that a certain game is "completely regged up". While it might be true that there is an average of 4-5 regs/table at some points of the day, I've never gone a single day without seeing a couple of handfuls of completely random people accross a set of my tables. Also, one thing that is especially true at ST's/Hypers is that players that are good at other forms of game will drop in from time to time, and while these people don't tend to be huge losers, they are frequently not quite as solid as somebody that grinds the same game every day of the week.
Josh has to play like 155,000 games to reach SNE. This mean's he has to invest like $5,000,000 to make a 6-digit profit. It's a really good deal in the sense that he has a high rate of success given his skill, but when you look at things from this perspective, it's not too difficult to see why a handful of guys will be able to eek out a nice profit when the have to invest a tremendous amount to do so.
