Next player to act (UTG), old man who had a nice score a few months ago and was playing higher and is back to the low limits, raises to 250. MP folds and the last player to act goes allin for 270 total. SB folds and it's my turn.

I had 900 behind and UTG covers. What's the best play?

Shovety shove shove shove. Sure there are some sets in their ranges, but a lot of AT-type hands and FDs. Never folding, so if you bet OM out there's nice dead monies.
