Most ski resorts with gondolas offer bike lifts in the summer. I've ridden at Keystone, Vail and Copper in the summer before. The resorts are starting to re-open for summer activities now.
It generally takes about 90 minutes to climb up the front side of most ski resorts on fire roads, and there are singletrack trails that you can take to get down. These are ranked the same as ski trails, green-blue-black by difficulty.
If you're not deep into the downhill MTB world where you're sending off rocks and wearing body armor and full face helmets, there's not a lot of difference between different mountains, since the greens will be plenty of action for you, or most people.
