This list is weird, never mind the delusional people who think they can beat up an elephant, who are the 1/3 of presumably adults who believe that a rat or house cat would beat them in a fight? Really though I think this more likely shows that Americans don't answer silly quizzes as seriously as British people do.
Also I think I'd rather fight a King cobra than a large dog or a chimpanzee, assuming I can get anti-venom afterwards. The chimp should be higher up the list.
An eagle may be worse than a large dog in some ways. I held a golden eagle once, they gave me a massive leather gauntlet and once this thing was sitting there, I asked the handler if it was talon proof. Once she stopped laughing, she explained it's just there to protect against accidental scratches, in fact its talons could not only go through the leather and my forearm but also crush the bones in my arm. The eagle was completely calm but it was a strange experience, it was definitely feral in a way that a dog isn't.
Roos vary hugely in size and aggression, I prised an overly pushy roo away from Mrs Werebeer by the neck in a wildlife park. This was a relatively tame 1.2 metre specimen, I wouldn't like to have to do the same thing with an aggro big red.

But even if you do, they don't always make sense? Are the winged monsters going to put themselves in harm's way? Do I have to chase down the ones that are @3x faster than me?

One thing I noticed about the double dippers, the anecdotes are overwhelmingly engineers who wound up in non tech roles. Tech people don't see management as work, just glorified baby-sitting.
