So yeah, obviously a player playing "jam up" is moving a lot of chips around.

This still really depends on how deep you're playing. Usually you won't just be check shoving flops with 100bb stacks in raised pots.
your stack is your threat to your opponent. by having him believe you may move in keeps him under control. moving in more often means you bet lighter for more money and bluff for bigger amounts. forces them to call more in big pots or suffer big losses to you.
