Depending on more info about the player, anything you said could be what he is thinking. This could also be a bad (good?) bluff or a badly played AA. It depends what he thinks of your flop action and if he thinks you are never folding, or are never folding a certain type of hand on that turn (like pair+fd). It depends if he was thinking at all. Why is this guy a nit, as described? Open limped pre?

The positions don't make sense, villain is button and you are... Hijack? CO? Two Hijacks are listed. but villain starts the preflop action before you?

The exhale is because he knew if you called his shove he is behind so that had him worried, when you folded that made him feel better.

Also - he doesn't put you on a flush. What hand could you possibly have that you'd bet pf, raise otf and then call a 3bet when you don't have the nut flush (because the Ad came on the turn)? You aren't doing that without a Ad, so hes putting you on TPTK/QQ/KK/77.
