Hero: (~$600) New to the table, Villain views me as good player.

Villain: (Covers) Nitty reg. Pretty much waits to flop the nuts, but will make bad calls pre, with hands like A6s so he can flop the nuts.

PreFlop: Hero opens to $20 with AJ, Villain calls, fish in SB calls.

Flop: ($60) AQ8 SB checks, Hero bets $40, Villain calls, SB folds.

Turn: ($140) A Hero checks, Villain bets $70, Hero calls.

River: ($280) 6 Hero checks, Villain bets $105, Hero calls.

Should I have played this hand differently?

I don't see why we're checking turn, but with a even with nitty reg we're certainly not folding trips GK to < 1/2 PSBs.

Pretty standard OP. I check many times on an ace turn after c-betting against regulars and grinders. Especially against V's that call many c-bets because they understand what a c-bet is, but this is a nit, so a bet is in order here definitely. But no, we are never folding.

I don't mind a check because V will bet a Q a lot on the turn or even with air after a float. Def raise river. If he has the case ace it's probably smaller. Don't be so afraid of the boat!

Since a lot of nits pre flop range is Ax, just like you said, turn is absolutely a b/f. Do you really think you can't get value from worse if he has many Ax hands in his range that improved ott?
