how do they stack and handle chips?
how do they look at and muck cards?
what hands they play and in what position?
bet sizing
what hands do they play strongly and hands they muck openly
do they play their button aggressively or do they use it for the opportunity to go to the bathroom?
how much do they buy-in for?
these are all things to look for.

This is great information. Although in small stakes, is playing the player more important than playing your cards?

You should always play the player but in 1/2 or 1/3 cards matter a lot.
In most showdowns, the best hand does win the pot.

One thing to note: poker has become so mainstream that nearly all players you meet have either played online, played in home games or watched poker on TV or seen it in the movies.
Even the most casual rec player understands and will try (or anticipate) a bluff. But only the experienced will 3-bet you light or 3 barrel you.
