Look, you could make an argument for playing it safe if your game was like GG's, and this was the biggest pot you would play against this guy in a decade but you can probably play pots like this with him 4-5 times a night! Or if your bankroll can't handle the swings (hint, don't sit down at this game if that's true).

3bet vs this player is fine

Just call the flop. Raising flop is going to be very high variance play. You're much better off seeing a safe turn card before you get all the money in.

Turn you can fold on any 7,6,5,4,A if he bets big again. His most likely donk range is going to be sets, 2 pairs, and 75, A5, A4, A7, 74, 64, 54 type hands. Against any of those cards just call flop and fold turn if any of those combos that improve come if he bets big.

Probably not folding many other cards.

Yea it is amusing that even after all the comments and 9 months of reflection that we aren't happy about getting 1000 BB in with 65% equity + some chops. While slowing down can reduce variance it also allows V to set his drawing price, allows hero to make mistakes when scare cards hit that don't help V, and allow V to fold when scare cards hit that don't help either player.

Flatting pre invites other Vs in and seems really bad. Flatting flop is debatable but if we are raising flop we aren't folding. Maybe we can get away on the turn when the 1 card straight hits but if that's the case we are also probably over-folding on a 6, maybe a 4, maybe an overcard, you see where this is going...

Yeah there’s no one correct answer really.. you have to see this situation over the long term to see what line is most profitable based on his tendencies.

If you 3b pre and bloat the pot up for the price of going HU, you should’ve seen this coming and be ready for the spot.

If not, just don’t 3b pre.
