You don't need to stack off everytime he flops a set. Not saying you won't, but some boards/runouts will save you from losing your stack as long as you aren't overplaying your overpair 150bb deep and can get away from it when needed.
River I don't really agree with jamming, it's a 1.5x overbet shove and I don't think it looks that bluffy. If anything, it looks more trappy w/ AA. I'd go large though, 3/4
