1-2 Game with higher buyin strategy

If it's a 1-2 game but the buy in is $500 so 250BB, should you play it like a 2-5 game or still play like a 1-2 and open 3BB? or should I bet the 7.5BB?

Open sizes at 1/2 and 1/3 have more to do with what your opponents are doing then any abstract game logic. As stacks get deeper opponents tend to get a bit looser and more willing to call preflop raises, so the best opening sizes will tend to creep up. How much varies widely from game to game. 3BB is a super tight game at any stack size.

I would look at the standard size most people are opening to and go from there. Some 1/2 and 1/3 games I've played the standard open is $8-10, others it's $15-25.
Just look at how many people are calling certain size raises and adjust appropriately based on the outcome/number of callers you're most happy with. If you're happy getting many callers, make your standard open smaller. If you generally want fewer callers, make your standard open bigger. (Just don't raise to different sizes based on your hand).

If the standard open at 1-2 was 3x no one would fold. Even opening to 6x, which is average in my experience, you're going multiways most of the time. I'd start there and then adjust to how the table is playing.

Open to $10 whether 100 or 1k deep and don't change sizing for any hand. Couldn't care less what open sizing they chose.
The depth of the game allows you to focus on postflop play and if they'd like to call more hands bc you made it 'only' $10, then fantastic result. If it goes 8 ways to a flop, ok, 3 ways, fine, you get 3b? great, less to continue and still piles of chips to capture post.
Best structure there is for 1/2 - opening to 20+ turns it into a variance fk fest which is exactly where your edge as a player gets dulled, to an extent.
