Where exactly in PokerTracker 4 are you seeing the statistics one day but not the next? If you are referring to your PokerTracker 4 reports then are you still on the 'Play Poker' tab? The 'Play Poker' section only displays data from the current session/day so if you want to review all of your poker data you need to move to the 'View Stats' section where there are a variety of built-in reports and filters - see this
tutorial video for an example. If you are in the 'View Statistics' section and are not seeing all of your data then make sure you have the correct player selected and that there are no filters or tags active.
If you mean your own HUD while playing then PokerTracker 4 is designed to only show your session stats in the HUD at each table. As your own number of hands increases your lifetime stats don't change much if at all between hands but your image at each individual table may vary considerably depending on the cards you've been dealt or your opponents. If you want to see your lifetime stats for analysis purposes you can do so in your PokerTracker 4 reports or load up a hand (any hand) in the replayer and turn that option on via the 'Options' button.
