1) Well straight off the bat, when you what to do filtering of your own play, the app doesn't have to wade through loads of observed data to find that. So the return on your queries to the DB regarding winnings, stats, graphs, etc should be much faster.
2) Datamined hands are only good for so long. After 6-7 month are people still playing the same way? Some yes, but a lot of people change completely or at least improve. So if you have a db with only observed data, it is easy to purge old data out of the db, without losing your own play.
Sure there is a whole host of other stuff, but 2 for starters.
