The default Fold to PF 3-Bet stat counts the times you fold to any 3-bet regardless of the situation. We have a built in statistic called Fold to PF 3-Bet When Raised which will count only times where you made the open raise.

(1) Openraise from SB for HU would be the Att to Steal stat. The only time you can attempt a steal in heads up play is to open raise the small blind.
(2) If they didn't attempt to steal but did VP$IP then they limped - I feel like you can use the other numbers to intuit limping percentage but I'm not certain off the top of my head exactly what would do it. Easiest would definitely be to make a custom stat for this.
(3) This stat is available by default as well - it's called Check Raise Flop.
