Hey! Yeah this is definitely possible. You wouldn't need to set up multiple grids, you'd only need one grid (with as many slots as you want) and then enable "Multi-Stack" mode in the stack setup tab (at the top middle).
Next for custom table filters (i.e. PKO going to specific slots) you'd need to build a New Table Location filter like this:
There's currently no way to prevent slots from having X amount of tables on them but IntuitiveTables will always look for the first open/least filled slots when new tables are added. So if you have a 3x2 grid it will fill slots 1-6 first before starting again at 1.
You can also use the "Show number of tables in a stack" overlay in the overlays tab to make sure you know how many tables exist in each stack so you can balance them yourself.
If you want to try it out, you could also have IntuitiveTables sort your tables after a table opens/closes. This would automatically balance out the stacks while preserving your custom filters. If you set a filter like I showed in the photo above, you can enable these settings here (make sure Sort is set to "By Filters"). You can also use the Table Hotkey "Sort Tables" to do this manually.
The only downside to this option is there is an unavoidable alphabetical sort that occurs here within the filters, so tables may shift around more than you'd like. If you end up using the software and really need a perfect "balance stacks after table closes" option let me know and I can try to work it in.
The last piece to your setup may be adding "Skipped slots" so that other tables/sites don't fill your PKO slots automatically. In the examples I gave so far, this would look like this:

Also note that Ignition/Bodog/Bovada tables no longer can be stacked due to a recent update they put out. If you do play this site, I suggest making some specific Ignition slots and setting up a custom filter similar to the one I showed you above.
