1 - If you are unsure of what number = which stat you can enable abbreviations. hud options > config properties > hud settings > [x] show abbreviations. Most of the stats are percentages so we don't show percentage symbols. Some stats that aren't percentages would be things like Hands, Name, Tourney M, Big Blinds, Net$ Won, etc.
2 - Number of samples is a more reliable number to determine validity of a stat since you don't have the opportunity for some stats every hand (i.e. you can't 4Bet every hand, etc). Sample size is shown in the parentheses after the stat in the popups. Once a sample size is >99 we stop showing them to save space.
3 - We generally do not give strategy advice, just technical support. What some people consider useful others might not agree with and these types of things can vary wildly based on the games/stakes you play. I would suggest asking in the appropriate strategy sub-forum of 2+2 for the games/stakes you play to get advice from others that play the same games.
