First of all, sorry for my somewhat slow response.
I was travelling over the past week and put certain things on hold for that time (with the exception of key generation and such of course).
EV is the amount of money you expect to make (or lose) on average in a given decision.
The first decision node that StoxEV displays is the one áfter you've already posted the blinds.
Strategy EV is nothing more than your EV at the decision whether or not you should post your blind and play the hand.
Since this decision node is not displayed in the decision tree it is possible to display it separately in the upper left of the screen (to turn this on/off go to extra->display strategy EV sb vs bb).
When you start your tree postflop it is no longer possible to determine what happened preflop and therefore it's not possible to recreate the strategy EV.
For that reason strategy EV is not displayed when starting postflop.
As for the displayed EVs:
The EV that is displayed below a decision node is the total amount of money you'll make/lose for all the actions in that decision.
You can also display the EV of individual actions and conditions by moving your mouse over them.
A popup will show their EV in the last line at the top of the popup.
The matrix with individual starting hands will even show how much each hand makes.
