On a side note, kind of a bad beat for the middle girl to pick Sears Tower as the “8th wonder that opened in 1973”
Unless that’s common knowledge that it opened in 1973? Wasn’t right, and Sydney Opera House made more sense, but still

Wouldn't have helped Jason, who chose a building that opened in 1819.

Part of the skill of Jeopardy is knowing how to parse the category and clue.
FINAL JEOPARDY! CATEGORY
WORLD LANDMARKS
FINAL JEOPARDY! CLUE
“The Eighth Wonder”, by composer Alan John & librettist Dennis Watkins, is about this building that opened in 1973
Two huge clues here.
1, World Landmarks in Jeopardy terms means outside the U.S. World anything means outside the U.S. Therefore the Sears Tower does not fit the category.
2, A librettist writes the text for a musical work. That word would not be included in the clue if it wasn't important. So the building in question hosts musical performances.
With those two pieces of information, which admittedly the casual watcher is not going to pick up on, the clue becomes much more solvable.
