The best answer is it depends. It's about draft capital and ceiling. Taking a 3rd QB/TE should only be a thought if the first two aren't great.
If I take an elite QB like Allen, Hurts, Mahomes, I'm only taking 2. I'll rarely ever use anyone other than Mahomes, so why bother? Also, if Mahomes goes down, I'm screwed and that team is dead, so it doesn't matter how many weaker QBs I have.
Similar things can be said about TE, but it matters less, since they score fewer points than QBs. If you take Kelce, take one more TE and load up on other players at other positions.
