Actually having the bishop on c6 doesn't work, you can't take on f3 because the pawn Queens. Simplest way is Be8 as Anand played.

But now Be5 seems to add biiiig winning chances. gxh5 is proly the only move, but then your guys plan seems to work, Kh5-->Kh6 (make him play Kg8) and then g4 - g5 - Bg7 - g6

This is the Rubinstein game. Notice how he is using his pawns to force entry to the 3rd rank in order to move to the queenside.

I guess it's still a draw though, Be5 Bb5 Kh6 gxh5 Kxh5 Bd3 seems to be good enough.

Ooops Kg4 played, not g4. Now black has h5!

Dead draw after h5 imo. Black just plays it like checkers, everything on the light squares.

just from the first glance, don't you think h5 is a bit risky? you sort of create a weakness yourself IMO and in a lot of lines pin your bishop to e8.

The pawn on h5 cannot be won, so it cannot be a weakness. Black just plays Bc6-d7 back and forth. Kings follow each other.

Opposite colored bishops with an extra pawn are usually drawn as a rule of thumb. Exceptions are extremely rare.
