Longest in terms of number of moves.

What are some of the most famous lengthy games played? Which dynamics contributed to their anomaly?

Can chess games regularly go past the median chunk for expected length? I'm talking outside the realm of 20-40 moves.

If two players were each playing to not capture their opponents king, could they still play a beautiful game, and for how long?

Here's the Wiki page. Long games tend to be endgames where one side has winning chances but victory can't come quickly against stodgy defense.

Chess games exceed 40 moves regularly (check out some of the tourneys on the left-hand side under "New Games").
