I'm attending the Las Vegas Open in a few weeks planning to play in the intermediate division. Since it's the first major tournament I've attended, I'm curious about how common it is to find intermediate-level heads up games or chouettes. What's the etiquette here -- would it be strange to invite someone to play for cash or is this common? How hard is it to find someone of a similar skill level without someone feeling like they're getting hustled?

Side action games used to be commonplace at tournaments, but in the last 15 years or so they have been much less frequent as directors have added more and more jackpots and side events to keep the customers busy. But there are still some players who prefer chouettes to side events, so ask around.
