According to an XG rollout, 7/4 6/1* is slightly better than the obvious 6/1* 4/1. It sort of makes sense - if White enters and hits, it will be on the 1-point where it's difficult to get out, and Black could collect a second checker on the return shot. If White doesn't hit, then it will be covered quickly. Would anyone find this play OTB?

I see the logic, but very much doubt I would have found the play, or had the courage to follow through with it if I had found it.

Since 6/1* is forced, I think a lot of players would see the two plays. Both win lots of gammons but in different ways, and both have a few bad numbers coming up. I think over the board for money I'd make the ace-point, because my experience is that straightforward plays are a little more likely to be right. In a match where I was trailing and really needed a gammon, I'd probably lean toward the fancy play.

It's easier to find the play if you realize that White should choose not to hit with 2-1 if Black plays 7/4 6/1*. Doesn't tell the whole story because White would rather roll a 1 than dance probably, but combine that with the fact that 7/4 6/1* is better/more flexible than making the ace when White dances with 6-6 or enters with 2-4, say.
