Jesus' last supper was a passover seder. This proves Jesus followed old Testament law till the day he died. Why don't Christians celebrate passover and not eat leavened bread for 7 days each year?

The Christian Greek Scriptures (New Testament or NT) is a continuation of the Hebrew Scriptures (Old Testament or OT). Not only are there quotations from the "Old Testament" found within the "New Testament," but many principles found in the OT are found within the NT. The point being, the NT does not cancel out the OT; it's simply a continuation.
The Judeo-Christian Bible is made up of 66 books combined, some of which happen to be in the OT while the others are in the NT. All of it is inspired by Almighty God Jehovah who authored the 66 books of the Bible.
What many people don't seem to realize is that the 66 Bible books were written by some 44 different men, during different centuries. Yet, despite the fact many of the Bible writers could not possibly have known each other (since they lived in different time periods), all 66 books of the Bible harmonize with one another, evidencing the fact that there was only one author. The author is the person whose thoughts are written down. The 44 or so men who were used by the Almighty were simply the writers of the Bible. They wrote under inspiration of God.
