preheat oven and cast iron pan to 500. pull out pan and put on stove over hight heat. rub the seasoned steak with high smoke point oil. then put it in the pan for 30 seconds on each side. put the pan in the oven and cook for 2 minutes per side. take it out and let it rest for 5-10 minutes. best steak evar!
