And since meat doesn't exactly get to temperature immediately, cause heat transfer is weird like that.
By the time you've spent the necessary time above 145, you're not even to 150 at the center. So although the wooden spoon might not see those temps, the bacteria that falls into the bottom of the pan certainly will... and our digestive tract will dissolve and reuse those building blocks just like it was meant too.
