Yeah I was thinking take off the legs and do a confit and then roast the crown (unfortunately I do not own a presse-canard). Duck fat is kind of expensive here though, wondering if I can mix it with rendered bacon grease.
You know jelly if you have a cuisinart one you can brew only one or two cups at a time and it automatically grinds the beans for you and everything. Probably cheaper in teh long run.
