I want to be able to create a HU HUD and have PT3 switch to this HUD when ever I am HU. E.g. I am starting a full ring table and a player sits and we start playing. This should use the HU HUD until a 3rd player sits.

The logical extension would be allow different HUDs for any number of players e.g.:

2 player: HU HUD
3-4 players: SH HUD
5+ players: FR HUD

That isn't currently possible I'm afraid - the HUD profile is based on the type of table you're at, not how many players are currently active. This sort of thing has been requested before, and is on the list for consideration by the development team, though.

OK. How about hotkeys for switching between HUD profiles?

You should be able to write a script to change profiles by activating the PT-icon > Change Profile, I guess, although I haven't done much with AHK myself.
