I think I did Gold Coast sometime in the last year. It was bland and somewhat flavorless. But it is very cheap. On Tuesday and Thursday it's free after you earn 200 points on your players card.

Pokerkraut on yootoob did a review of Palms and Rio a month or two ago. He liked Palms, and Rio, not so much.

There's a panda express inside the grand canal shops @ Venetian. You no longer need an Uber to go to in n out, there's one between the Linq and the Flamingo.

I went to one one of them. Unfortunately it was not very helpful. The food was pretty good tho.

Palms is the best of the 3 by far (Rio with seafood upgrade may be roughly equal, only if you are going to eat mostly seafood... but I'd still pick Palms for variety of quality items) and the best value by far. It's very good quality and has some slightly out of the ordinary items. Some of my favorites in multiple trips were: walnut shrimp, salmon, cod, pulled pork, al pastor, french onion soup, spicy mac n cheese, thai curry clams. The dessert bar is very ordinary, but otherwise it's quite good IMO.

Rio's non-seafood and Gold Coast are both very plain. When I go to GC buffet, I usually just load up on fish. I only ate at Rio when got free buffet passes, and somehow got the seafood upgrade free. If it had been limited to only the regular buffet, it would have been extremely disappointing. If you're going to pay ~$50+ for a buffet (cost of Rio incl. seafood), I would go to Caesar's or maybe Bellagio.

Thanks for all the action on this! I just got back from Vegas and can confirm some stuff:

The A.Y.C.E. buffet at Palms is the best in the area. It's about a 20 minute walk, so it only makes sense for a big lunch before a noon start time or if you can move quick during a 75 minute dinner break.

I walked up and sat at the bar of Guy Fieri's El Burro Borracho. Literally walked right in and sat at an open seat at the bar.

The Gold Coast is about 10-15 minute walk, but you can find a Subway or Friday's there for quick food and to get out of the Rio.
