Stay at a place like Holiday Royale which I've done before with full aprtmnt with kitchen slightly off strip(will prob. buy cheap scooter for commute) or rent a airbnb room month to monrh? 6+ month stay

Are there even AirBnB rooms on strip for the price range of the HolidayRoyale aprtmnt? Around $1,200? Just started looking and didnt see much. Thank you so much!

If you're doing 6+ months you could probably do better with a regular furnished lease as opposed to airBnB, imo. Maybe not ON the strip, but you should be able to find something reasonably close.

Given the situation at the moment I'd say that you'd probably have some good luck negotiating AirBNB prices down with the seller, I know airbnb got murdered by covid so a lot of people with empty spaces would probably be happy to just get some rent paid as opposed to nothing at all.
